Yogurt Rice – Indian Curd Rice
INGREDIENTS 1/2 c. rice 4 c. water 1 tsp. salt 1/4 c. butter 1 med. onion, finely chopped 2 tbsp. fresh mint leaves or 2 tsp. dried Parsley 3-4 c. plain yogurt DIRECTIONS Bring rice, water and salt to boil, then simmer until tender.
